It’s getting darker & colder these days.. so I decided to make a delicious, homemade Pumpkin-Carrot Soup.
Making soups is something my grandmother used to do a lot. I can still remember almost every time I came to here house, she was making a different soup and you could always taste the love. My mom also loves to make soups and she taught me that it is super easy, healthy and perfect for these cold days.
The following ingredients are necessary for this recipe:
- 1 sweet onion
- 1 Spanish red chili pepper
- A bit of ginger
- Vadouvan spices by Jonnie Boer
- Three winter carrots
- 1 bag of Pumpkin cubes
- 2 bouillon cubes
- 1,5 L water
- Optional: some coriander
- Optional: A bit of coconut milk
First of all, you heat the pan, you cut the onion, chili pepper and ginger. You fry these ingredients for about 10 minutes together with some Vadouvan spices.
Meanwhile, you peel the carrots and cut them in small slices. When this is finished, you add the carrot and pumpkin cubes to the pan. Then, you pour the 1,5 Liters of water together with 2 bouillon cubes. I used chicken bouillon, but you could also use vegetable bouillon.
Now that you have added all ingredients, it is time to boil the water and let it boil for about 15 minutes, until it is soft enough to puree. Then, you take the pan from the fire and start to puree the soup with a hand blender.
This is it, your super delicious, homemade Pumpkin-Carrot soup is done!
If you would like you could add a little bit of coconut milk and add some coriander on top when serving the soup, but of course this is optional.
